Seasoned recipe · Published October 30, 2026
Fluffy russet potatoes with crisp skins, piled with cheese, bacon, sour cream and chives.
Serves: 4Prep: 10 minCook: 1 hrTotal: 1 hr 10 min
Ingredients
- 4 large russet potatoes, scrubbed
- 1 tbsp olive oil
- 1 tsp coarse salt
- 4 tbsp butter
- 1 1/2 cups shredded cheddar
- 6 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 3 tbsp chopped chives
- Salt and pepper to taste
Method
- Heat oven to 425°F (220°C). Pierce potatoes several times with a fork, rub with oil and coarse salt.
- Bake directly on the rack 50 to 60 minutes until the skin is crisp and a knife slides in easily.
- Slice open lengthwise and fluff the inside with a fork. Add butter and season with salt and pepper.
- Top each with cheese and return to the oven for 3 to 4 minutes until melted.
- Finish with bacon, sour cream and chives.
Tips
- Don't wrap in foil. It steams the skin instead of crisping it.
