Seasoned recipe · Published October 30, 2026

Serves: 4Prep: 20 minCook: 20 minTotal: 40 min
Ingredients
- 2 lb russet potatoes, scrubbed
- Vegetable or peanut oil for frying (about 6 cups)
- 1 1/2 tsp fine salt
- Cold water for soaking
Method
- Cut potatoes into 1/4 inch sticks. Soak in cold water 30 minutes, then drain and dry very well with towels.
- Heat 2 inches of oil in a heavy pot to 300°F (150°C).
- Fry in small batches for 5 to 6 minutes until soft and pale, not browned. Drain on a rack.
- Raise the oil to 375°F (190°C). Fry again in batches for 2 to 3 minutes until golden and crisp.
- Drain, salt immediately and serve hot.
Tips
- Dry potatoes are the key to safe frying. Water makes hot oil spatter.
