Homemade pizza with chewy, crisp-edged crust, a simple tomato sauce and plenty of mozzarella.
Serves: 4Prep: 1 hr 30 minCook: 12 minTotal: 1 hr 42 min
Ingredients
- 3 1/4 cups (410 g) bread flour
- 1 tsp instant yeast
- 1 1/2 tsp salt
- 1 tsp sugar
- 1 1/4 cups (300 ml) warm water
- 1 tbsp olive oil
- 1 cup crushed tomatoes mixed with 1 tsp olive oil, 1/2 tsp salt and 1/2 tsp dried oregano
- 2 cups shredded low-moisture mozzarella
- Fresh basil and toppings of your choice
Method
- Mix flour, yeast, salt, sugar, water and oil into a dough. Knead 8 minutes until smooth.
- Cover and rise 1 hour until doubled. Divide into 2 balls.
- Place a baking steel or inverted baking sheet in the oven and heat to 500°F (260°C) for 30 minutes.
- Stretch each ball into a 12 inch round on parchment. Spread with sauce, leaving a 1/2 inch border, and top with mozzarella and toppings.
- Slide onto the hot surface and bake 8 to 12 minutes until the crust is blistered and the cheese is bubbling.
- Top with fresh basil, slice and serve.
Tips
- Pat mozzarella dry and don't overload the sauce. Too much moisture makes a soggy center.
