About Seasoned

Seasoned is an independent recipe site for the dishes people ask for by name: soul food, Caribbean and West African classics, written down properly, with modern preparation that fits a real week.

Why Seasoned exists

Some of the best food in the world has never been written down. It lives in the hands of the people who make it, measured in pinches, handfuls, and "until it looks right." That is a beautiful way to cook and a frustrating way to learn. If you have ever asked for a favorite recipe and been told to "just season it," you already know the problem.

Seasoned exists to close that gap. We take the dishes that anchor Sunday tables, holiday spreads, and weeknight comfort, and we write them down with real quantities, clear steps, and honest timing, so you can cook them with confidence whether it is your first attempt or your fiftieth.

The food we cook

The kitchen here is rooted in soul food, Caribbean cooking, and West African cooking. These traditions are related through the history and movement of the African diaspora, but they are not interchangeable. Jollof rice, jerk chicken, and smothered oxtails each come from a particular place and story, and we try to describe them with respect instead of flattening them into generic "ethnic food."

Alongside those anchors you will find the everyday comfort food that fills out a table: baked mac and cheese, candied yams, meatloaf, loaded baked potatoes, crispy fried fish, and homemade bread, donuts, and cookies. You will also find plant-forward dishes like falafel bean wraps, creamy hummus, and stuffed bell peppers, because a good table has room for everyone.

The recipes are organized into five groups so you can find something for the night you are actually having:

  • Wraps & Handhelds. Portable mains built for weekday lunches and leftovers that reheat well.
  • Comfort Classics. The dishes people request by name, with measurements and all.
  • Pizza & Pasta. Weeknight-friendly versions that do not cut corners on flavor.
  • Plant-Forward. Vegetable-first mains that hold their own next to anything else on the table.
  • From the Sea. Simple, well-seasoned seafood for people who think it is harder than it is.

What "modern preparation" means

Modern preparation is not a shortcut around flavor. It means using what today's kitchens offer, such as sharp knives, an oven thermometer, make-ahead components, and freezer-friendly batches, while protecting the steps that actually build taste. We keep the browning, the layered seasoning, and the resting time, and we look for ways to make the rest of the process easier to fit into a busy week.

A few habits show up across everything we write:

  • Season in layers. Salt and spices go in at several points, not only at the end, so flavor builds instead of sitting on the surface.
  • Brown properly. The dark bits left in the pan are flavor. We wait for them and use them.
  • Give timing as a range, with a visual cue. Stoves and pans differ, so "10 to 12 minutes, until deeply golden" is more honest than a single number.
  • Rest what needs resting. Meats and baked dishes finish better when they have a few minutes to settle.
  • Write quantities down. Weights and measures are listed in the order you use them, so you are never guessing mid-recipe.

Cooking safely

Good food starts with safe food. A reliable instant-read thermometer is one of the best tools you can own. As general guidance, the United States Department of Agriculture recommends cooking poultry to an internal temperature of 165°F (74°C), ground meats to 160°F (71°C), and fish to 145°F (63°C). Leftovers should go into the refrigerator within two hours and be reheated to 165°F before serving.

Many dishes also contain common allergens, including wheat, dairy, eggs, shellfish, nuts, and sesame. Please read labels and adjust ingredients to fit your household. Seasoned is a cooking site, not a source of medical or dietary advice. If you manage a health condition or a serious allergy, check with a qualified professional.

Where to start

If you are new here, browse the recipe grid on the home page and use the category buttons to narrow things down. If you are setting up or refreshing your kitchen, the free Seasoned Kitchen Starter Checklist covers what is worth having on hand before you begin.

When you want everything in one place, the E-Book collects every recipe published on the site plus additional recipes that have not been posted yet, delivered as a single downloadable PDF that works on a phone, a tablet, or a printed page. A line of, including kitchen aprons, totes, and pantry items, is on the way.

How Seasoned is supported

Building and testing recipes takes time and money. Seasoned is supported by sales of the E-Book and by advertising shown on some pages. Ads are served by Google AdSense, and advertisers do not review or influence the recipes we publish. If we ever add affiliate links or sponsored content, we will label them clearly.

A note on anonymity

You may notice that this page does not introduce a named author or show a photo. That is intentional. The publisher of Seasoned prefers to stay private, and the work is meant to stand on the food rather than on a personality. In place of a byline, we offer transparency about how things work here: how recipes are written, how the site is funded, and how to reach us when something is not right.

Corrections and feedback

Recipes get better when people cook them and tell us what happened. If you find a measurement that looks off, a step that is unclear, or a substitution that worked beautifully, please let us know through the contact page. Cooks who have made a dish in their own kitchens are the best editors a recipe can have, and we update recipes when we can confirm a fix.

Thank you for spending time at our table. Come hungry.
